Crush: 100% whole berry destemmed into small, open top fermenters

Fermentation: Pumpovers 2 times daily; 42 day maceration
Barrel Regime: 100 % new French Oak, center forest, Tonnellerie Taransaud, 22 Months aging
Bottling: August 8, 2006 without fining or filtration
Winemaker's Notes:
"This is our fourth vintage of Cabernet from Vogelzang, one of the gems of what will be the Happy Canyon Appellation. 100% Bordeaux Clone 337, aged in 100% new Taransaud (Cognac-Region) barrels for 2 years. The wine was bottled unfined and unfiltered. This version is full of blackberry and cedar aromas, with generous flavors of berry, mocha and espresso. I would recommend additional bottle aging of 6-10 years or decant if you find yourself wanting to drink it now" -Bill Wathen, winemaker.

Barrel Regime: 100% French Taransaud; 100% new oak. Aged for 22 months
Racking: 2 times prior to bottling

Harvest: Hand Harvested in individual lots, Sept 23- Oct 7, 2004
Yields: 1 ½ to 2 ½ tons/acre, around 4 pounds per vine
Crush: Whole berry destemmed and lightly crushed. Gravitied to open
top fermenters.
Innoculum: BDX(Bourdeaux) MT(Languedoc)
Fermentation: 10-40 days, with pumpovers 2x daily during active fermentation.
Barrel Regime: Taransaud barrels(Cognac, France) Center forest
70% New, aged for 22 months
Racking: 3 Rackings prior to bottling
